A healthy potatoe meal garnished with spicy corn and oil bean sauce

Greetings everyone!

Today, I want to present to everyone a healthy, nutritious and amazing meal that I prepared for my family.

I prepared it by combining a few healthy ingredients. One of which I love so much is oil bean.
This is a local ingredients used in preparing different local dishes like abacha, soups and much more. Here I decided to turn it into an amazing vegan sauce and used it to garnish my food.

Combining potatoes with all these amazing ingredients taste amazing and I enjoyed it with my family.

Here's how i prepared it...

Ingredients needed

  • 4 pieces of potatoes
  • 1 big corn
  • 2 small sized of onion
  • 6 pieces of fresh pepper
  • 3 tablespoon of peanut oil
  • a handful oil bean
  • enough water for cooking
  • salt to taste

How to prepare

Boil the potatoes
To prepare this meal, I began by washing, peeling and cutting my potatoes into my desired shapes. Then I placed them into a pot, added some water and half teaspoon of salt,and I boiled them until soft and tender. Once ready, I drained and set aside.

Slice the veggies
While the potatoes were cooking, I prepared the rest of the ingredients. I sliced my onions and fresh pepper and removed the corn kernel from the cob. All set aside and ready to be used.

Prepare the oil bean sauce

Oil bean is a traditional local ingredients that's both delicious and packed with nutrients. I gave the oil bean a wonderful rinse. Then i blended it using some chopped onions, 1/8 cup of waterand a pinch of salt. The goal is a smooth, creamy sauce and mine came out beautiful.

** sauté the veggies**
In a sauce pan, I added my peanut oil and let it hear slightly for about 5 seconds. Then I added my chopped onions, pepper and corn. I stirred them gently and occasionally, until the corn softened. Now the aroma has began filling the kitchen. I removed from heat and set aside

Arrange the goodies

Now it's time to plate!
I laid out my soft potatoes as the base, then generously topped them with the sautéed veggies mix. Then I drizzled my creamy oil bean sauce on the top as garnish. Now it's time to enjoy!.

This delicacy is just awesome. It is healthy and very nourishing. The oil bean sauce is heavenly, it complement the entire delicacy. I love the corn, it was crunch, tasty and spicy.
This is an ideal meal.
