Smoky spicy Eggplant Mashed! Baingan ka bharta!

As I was born and bought up in West bengal so I love Eggplants but only in two ways..
First is My favourite Baingan ka Bharta. The smoky spicy fire roasted eggplants with a spoon of Mustard oil in it. And the 2nd one Beguni. Beguni is Bengal snack which is sliced and dipped in gram flour and fried in oil. I love these two dishes alot.
So, Today I am going to share Baigan ka Bharta Recipe and soon in my next post I will try to share Beguni recipe.
So lets see what we need for Baigan ka Bharta-
INGREDIENTS-
▪︎eggplant-1 (purple)
▪︎onions-½cup
▪︎tomato-½cup
▪︎garlic-4 -5 pods
▪︎ginger-½tspn
▪︎green chilies-1 or 2
▪︎cumin seeds-½tspn
▪︎turmeric powder-½tspn
▪︎redchili powder-½tspn
▪︎salt- to taste.
▪︎lemon juice-1tspn
METHOD-
1.take eggplant, tomatoes, garlic and ginger.
2.now put slit in the eggplant with the knife and tuck in the garlic clove inside it. The roasted garlic add a nice flavour so dont skip this.
3.and also put one green chilli. I have used one green chili because my daughter wont eat spicy. If you love all spicy then go for more chilies.
4.apply some oil with the brush and put the eggplant directly on heat. If you will do in oven then the smoky aroma and flavour will not come. So fire roast the eggplant. You will like the taste.
Check the eggplant by inserting a knife, if it goes easily that means its done.
5.now roast the tomatoes. You can skip this. Simply you can chop and add the tomatoes but I am roasting the tomatoes.
6 now once they are cooled peel the tomatoes and eggplant skin.
7.now chop the eggplant or mash it with masher and keep aside.
8.heat Mustard oil in a kadhai.
9.add cumin seeds and green chilies
10.now add ginger and garlic(take fresh one).
11.add chopped onions. Cook it for 2 mins.
12.then add chopped tomatoes.
13.further add turmeric powder, red chili powder and salt. Cook for 5 mins till the tomatoes are mushy.
14.then add mashed eggplant along with roasted garlic.
15.now mix it well.
16.cook it for 5 mins more then off the flame.
17.now smear ½tspn mustard oil an mix once again.
18.add some coriander leaves and lemon juice. Transfer it in a bowl!
And serve Baingan ka Bharta with hot Rotis!
