Today, we present a new edition of THE BEST OF THE WEEK. Our intention with this post is to recognize the best of the best of the posts that you, friends of Hivers, share weekly in our Plant Power (Vegan) community, selecting the top three recipes from the previous week; which on this occasion corresponds to the period from Wednesday, November 19, to Tuesday, November 25, 2025.

Each of the selected publications will be reviewed in this curatorship, and in turn, its author will be awarded 50 $foodie token, in order to give him/her a modest recognition for the excellence and quality of his/her work.

Fastest, simple dinner after long travel | by @hindavi

After traveling for several weeks, @hindavi returned home, and upon arrival, she didn't have many vegetables or ingredients in her pantry. So, she had to get creative to make a delicious, hearty, and nutritious dinner, and that's the recipe she presented to us this week: a simple, quick dinner with a delicious vegetable stew, white rice, and flatbread. It's all very tasty, so it's definitely part of The Best of the Week!

Aceh Pidie Tipical Long Bean Recipe | by @nurfay

This week, @nurfay brought us a traditional and popular ingredient from her region: toasted coconut, or coconut gonseng. This spice is usually used in non-vegan dishes, but she decided to veganize it using long beans, creating a delicious stew served with white rice. This is a recipe she often enjoys when visiting her parents, but this time she decided to make it herself, with fantastic results, so it's also part of The Best of the Week!

Sandwich filled with baked eggplant and other ingredients [Eng/Esp] | by @verdesmeralda

Sandwiches can be fantastic, complete meals, just like the one @verdesmeralda shared with us this week. She remembered the delicious flavor of roasted eggplant, but wanted to elevate it, making it part of a unique sandwich. She also prepared it with a delicious avocado she had been given, as well as other vegetables and spices, resulting in a tasty, nutritious, and creative recipe, which is why it's also part of The Best of the Week!
