My Kontomire Stew(A Ghanaian Delicacy)

Greetings to this wouunderful family .Hope you all are doing Extremely fine.
I welcome you all once again to my Blog.

Today my Ghanaian friend came around and decided to teach me one of her Ghanaian delicacy and I decided to learn which I cooked and did very well.it is called Kontomire Stew.

#INGREDIENTS USED#

.Kontomire (TAROLeaves)
.One bulb of onions
.Two pieces of fresh pepper
.one tablespoon of Salt for taste
.One tablespoon of curry spice
.Two cups of grinded melon
.Half litter of Red oil
.one full Yam
.one pieces of Unripe plantain
.A little garlic
.Water

#PROCEDURE USED#

Firstly I prepared all my ingredients and set aside.

I washed my Kontomire leaf,with my onions and fresh pepper.

Then I started slicing my Kontomire(TAROLeaves)The star ingredients because it provides a leafy green base,After slicing,I set it aside.

Then I peeled my unripe plantain and yam
And set aside.

Then I washed my plantain and yam and put in my clean pot and put to my gas to cook.it is a local dish for Ghanaian.but popularly all tribes are enjoying it today.

After some minutesof boiling,I added my salt.

My yam and unripe plantain was ready to serve.

Secondly I sliced my bulb of onions of because it provides a Favoury base of flavor and set it aside.

Then I pour a little cold water to my grinded melon and cover it a little so that it can be in a little block form.

I prepared my fresh pepper and pound my garlic and set aside.

Then I put my dry pot on fire and pour my red oil on it,Then added my onions, and put my fresh pepper , my spices both curry and garlic and my salt and then put my grinded melon bit by bit and stir very well.it can also be cooked with firewood because I cooked with gas and firewood.

After allowing my melon to stem a little while,I added my Kontomire (Taro leaves) on it and allow it to stem very well,
The grinded melon(Egusi) in our local dialect will thicken the stew a little and add a Nuffy flavor

Then I stir very well.Now my Kontomire stew will be ready .

It can be served with white yam or unripe plantain.you can also try it out with white rice or any swallow of your choice.

My Kontomire stew with yam and unripe plantain was ready to serve,the stew must not be too thick or too watery.
