Chicken Adobo with Lots of Tofu

Hello, food lovers! 🌷🌸🌷
Today I want to share what we had for lunch. It's one of our all-time favorite Filipino dishes with a little twist.
I cooked Chicken Adobo with Tofu. ✨
That time, we only had a few pieces of chicken left in the kitchen, so I remembered that tofu is such a great alternative or partner to meat. That gave me the idea to combine them.
Ingredients:

• 500 grams chicken
• 2 cups tofu, cubed
• 5 cloves garlic, minced
• 1 medium onion, sliced
• 1 piece green chili
• 1/2 cup soy sauce
• 1/3 cup vinegar
• 1/2 cup water
• 1 teaspoon black pepper
• 1 teaspoon sugar
• 1 piece chicken cube
• 2 tablespoons cooking oil
Let's cook!

Before frying, I seasoned the tofu cubes first with a little salt and pepper. This gives it instant flavor.


Then I heated some oil and fried them until they turned light golden on all sides. Frying them first keeps them from breaking apart later and gives them a nice, slightly crispy skin. Once done, I set them aside on a plate.

In the same pan with a little oil left, I sautéed the garlic and onion until they smelled so good. Then I added the chicken pieces and cooked them until they were light brown on all sides.

I poured in the soy sauce, added the peppercorns, and the chicken cube. I gave it a quick mix, then added a little water. I let it boil gently, then lowered the heat, covered the pan, and let it simmer until the chicken was almost tender and cooked through.

Now it’s time to add the fried tofu back, I also put the green chili for that extra aroma. Then I pour in the vinegar and add a tiny bit of sugar. I didn’t stir it right away when I added the vinegar, I just let it boil for a minute or two to help remove that sharp sour taste. Then I mixed everything carefully so the sauce coats every piece of chicken and tofu. I let it simmer until the sauce thickened, and the tofu had soaked up the adobo goodness.

It was absolutely delicious. The tofu tasted just as good as the meat. The combination worked perfectly.
The tofu soaks up all the delicious adobo sauce, plus, it makes the dish plenty enough for everyone to enjoy. Perfect if you want more servings without needing too much meat!
