Food Preservation Continues

I have made orange zucchini jam, salsa, vegetable stock, cherry jam, and spiced red cabbage this week. The local farms are producing well.

This year there was early concern for the corn crop because of inadequate rain, but farmers planted a new drought-resistant variety that seems to have performed beyond expectations. God bless the small family farmers as they maintain the traditional way of life that built America.

I harvested part of my corn crop today, and blanched and froze it. This variety does not have huge ears,but they did mature, which is tricky where I live.

I am going to try drying some corn in my dehydrator. I did some fruit last year and that went well. Enjoy your corn. !CTP

Wow, @fiberfrau your canned foods all look so beautiful and nicely done! What do you put into the orange zuccini jam to make it orange? I love the sound of the orange zucchini jam :) The salsa and red cabbage look gorgeous and so does the cherry jam! It must have been fun shopping at the local farmers market. Orange Jello powder gets added right before I put the jam in jars. I love to support local farms and am blessed to live among so many.
