Healthy High-Protein Soybean Pulao Recipe

How are you everyone? I hope you all are happy and healthy. Today, on Sunday, I am sharing with you a recipe for high-protein and healthy soybean pulao. This soybean pulao recipe is easy and quick to make, and it tastes absolutely amazing. My mom used to make soybean pulao, and whenever I make it, it reminds me of the beautiful memories with my mother. Soybeans are a protein-rich food that keeps us healthy.

Ingredients:

Soybeans – 1 cup (soaked)
Rice – 1 cup (washed; soak for 10 minutes if old rice)
Oil – 3 tablespoons
Whole spices – 10 black peppercorns, 2 cloves, 1-inch cinnamon stick, 2 bay leaves, 1 teaspoon cumin seeds, 1 teaspoon fennel seeds, 2 green cardamoms, optional “chhabila/pathar phool” for aroma
Vegetables – 1 onion (chopped), 1 tomato (chopped), 1/2 capsicum (chopped), 1 carrot (chopped), 2 green chilies (slit)
1 small piece of ginger and 2 cloves garlic, chopped)
Water – 2 cups
Fresh coriander leaves – for garnish
Preparation

Soak soybeans in a bowl.
Wash rice and soak for 10 minutes if it’s old rice (skip soaking for fresh rice).
Heat 3 tablespoons of oil in a pressure cooker.
Add whole spices: black pepper, cloves, cinnamon, bay leaves, cumin, fennel, cardamoms, and optional pathar phool. Saute until aromatic.
Cook Vegetables:
Add chopped onions, garlic, and ginger. Saute until onions turn golden.
Add tomato, capsicum, carrot, and green chilies. Cook until the tomato softens.
Add salt
Then add soaked soybeans to the cooker and saute for a few minutes.
Pour in 2 cups of water and bring it to a boil.
Add the soaked rice, mix gently, and close the pressure cooker.
Cook for 2 whistles on medium heat, then turn off the gas.
Serve:
Once the pressure releases naturally, open the cooker.
Garnish with fresh coriander leaves and serve hot.
