Delicious spinach and green moong dal

Ingredients:
250 grams fresh spinach (palak), cleaned, washed, and chopped
½ cup green moong dal (split mung beans)
3 cups water
5 green chilies, finely chopped
2-3 garlic cloves, crushed
Salt to taste
2 tablespoons oil
3-4 additional garlic cloves, sliced
Step by Step recipe
Cook the Moong Dal
Begin by rinsing the green moong dal thoroughly. In a deep pot, combine the dal with 3 cups of water and bring it to a boil. As the dal cooks, you’ll notice foam forming on the surface—skim this off for a cleaner broth.
Add Flavor to the Dal
Once the foam is removed, add the chopped green chilies, crushed garlic, and salt to the dal. Stir well, cover the pot with a lid, and let it simmer on low heat for about 10 minutes.
Incorporate the Spinach
After 10 minutes, add the chopped spinach to the pot. Mix everything together and cook for another 5 minutes, allowing the spinach to blend with the dal and soften. Once done, remove the pot from the heat.
Prepare the Tempering (Tadka)
In a small frying pan, heat the oil. Add the sliced garlic and sauté until it turns golden brown. Be careful not to burn the garlic as it can turn bitter.
Combine and Serve
Pour the garlic tempering over the cooked dal and spinach mixture. Stir gently to combine, and your flavorful Spinach and Green Moong Dal is ready to serve!
